Caprino Farm Natural Yoghurt is a pot set yoghurt containing Lactobacillus acidophilus and Bifidobacterium lactis cultures. John has not added any stiffeners such as corn starch or gelatin to the mixture. John made his own cabinet with a controlled heat source and circulating fan to enable the yoghurt to be pot set.

Pots of Yoghurt in The Setting Cabinet
When the milk has been inoculated with the yoghurt cultures it is poured into the containers and placed in the setting cabinet.

Air flow holes drilled into shelves
The Yoghurt containers are stacked so that the warm air can flow evenly all around the pots keeping the cabinet at a constant temperature.

The cabinet is almost full
The Heat source is in the base of the cabinet with a fan to circulate the air through the unit.

Pots are stacked two high in a pattern to allow air flow
The Yoghurt containers are made from a natural plastic enabling the product to be seen more clearly.
